Alternatively, it’s possible add to the previous ingredients a tomato sauce seasoned with pieces of pork (pigskin also called “nnoglia”, pigskin sausage, cutlets). InstructionsPrepare the dough with flour and water to get cylinders about 5 cm long and 1 cm in diameter; then pull them up using the “piece of iron”. In a pan fry the garlic with the oil, together with the breadcrumbs. Boil the pasta in abundant salt water, drain and pan-fry with the browned (and possibly with the tomato sauce seasoned with pieces of pork that has to be pre-cooked). Serve the dish adding last of all a sprinkling of sheep cheese and chopped walnuts and, if you prefer, substitute the pepper with a pinch of grated horseradish. |
