Cabbage and beans soup

Ingredients for 4 people

  • 200 grams of local greenish beans
  • Half cabbage
  • 200 grams of local pigskin also called ‘nnoglia
  • Local extra-virgin olive oil
  • Salt
  • Chili pepper

 

Instructions

Leave beans to soak the night before, than cook them into a clay pot for about two hours; apart peel the cabbage, wash, slice and put it to cook in salted water.

At last add cabbage to beans, leaving a little of cooking liquid, and then add pigskins already cooked leaving everything cook together for other 15 minutes.

Finally add chili pepper and oil and serve the soap piping hot accompanied by some local bread slices lightly toasted.
