Ingredients for 4 people

  • A free-range rooster already plucked and eviscerated
  • Rooster offal
  • 2 eggs
  • Breadcrumbs
  • 800 grams of tomato sauce
  • 200 grams of pecorino cheese
  • Parsley
  • Garlic
  • Salt and pepper

Instructions

Wash the rooster carefully.

For the filling: fry offal and when are ready mix with eggs, cheese, parsley, breadcrumbs, garlic, salt and pepper.

Then fill the rooster with the mixture, sew it up using some string and cook into oil until golden brown.

Then add tomato sauce and cook for other 15-20 minutes.

With the sauce you can also season some homemade pasta.
